Olde Fashioned Thumbprint Cookies

Ingredients

  • 1 cup unsalted Butter
  • 1/4 cup of Sugar
  • 1/3 cup of Brown Sugar (packed tightly)
  • 1 large Egg Yolk
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon of Almond Extract
  • 21/4 Cups of All Purpose Flour
  • 2 teaspoons of Cornstarch
  • 1/2 teaspoon of salt
  • 1/2 cup sugar for rolling cookie dough
  • 1/2 cup of jam or preserves, flavor of your choice, I use Strawberry or Raspberry

Instructions

  • Place butter in the bowl of a stand mixer. Or in a bowl to mix the dough with a hand mixer and beat until creamy
  • Scrape down the sides of the bowl, add sugar and beat until well combined
  • Add egg yolk, vanilla and almond extract
  • In a separate bowl, whisk together flour, cornstarch and salt
  • With the mixer on low speed gradually add flour to wet ingredients until combined. If you dough strains the mixer, take the dough out and continue mixing the dough together using your hands
  • Scoop the dough into 1 T sized balls and roll into a ball, with no cracks
  • Roll the ball in sugar and place on the cookie sheet or a plate
  • Use your thumb to indent each cookie with a print. Place into the freezer for 30 minutes.
  • Preheat Oven to 375F place jam in a small container in microwave 5-10 sec
  • Spoon jam into each thumbprint filling indent to the brim
  • When oven is preheated place the cookie sheet and bake at 375F for 11 minutes until edges are just beginning to turn brown
  • Allow cookies to cool completely on cookie sheet before enjoying
  • Prep Time: 20 Minutes
  • Cook Time: 11 Minutes
